Your first three cuts form a triangle in the middle, which is surrounded by pieces on each corner and each side. That makes seven pieces.Then cut the cake in half lengthwise

About the coins... I reduced the scale of the problem to exhaust all combinations, so I translated that to 10 bits, with 8 random 1s and 2 0s. I found out swapping the first two bits would level the number the 0s in those 2 regarding the number in the other 8.in the following table each line contains only 2 0s. 00|1111111101|0111111110|0111111111|00111111then swap 1st 2 bits and leave others as is, it results:11|1111111110|01111111 01|0111111100|00111111both groups always contains the same number of 0s.So answering to the original question: take a random group of any 10 coins, and flip them. The number of blue coins in that 10-element set will be the same as the number of blue coins on the other 40-element set. I think that's it.
