What kind of cooking oil do you use?
on: July 05, 2014, 03:48:09 AM
So I have been using Vegitable oil's my whole life for cooking and i'm thinking of trying a coconut oil or something different that might be a bit better for my health. I vaguely remember eating something cooked in a coconut oil and it had a weird flavor to it. Am I just imagining things? I'm looking for a good oil to cook with that has a higher smoke point. So what do you guys use and recommend?

depends on what is being cooked, but if it is just normal everyday cooking, I use 10w30,  the 10w40 is for special occasions!

If I can help, let me know

Canola oil 95% of the time, olive oil 4%, and butter 1%. Never tried any other stuff like palm, corn, peanut etc., don't really see a reason to.

Coconut oil may have a strong flavor I'm not exactly sure.  I use Extra Virgin Olive Oil mostly and Canola or Safflower Oil.  EV Olive Oil has many health benefits so eat away in good health.

I have plenty of olive oil but it has a strong flavour so anything you cook with it will take on some of the olive oil taste. This can be a good thing for some foods.

I never use Olive Oil to cook as it has a low smoke point and I have read if you bring any oil to its smoke point it is bad for your health. Not sure if this is 100% true though.

For frying, I use rapeseed oil.

We use peanut oil for frying. Neutral taste, handles high temperatures well. I think you are right about oils and keeping below the smoke point.

Olive oil for mostly everything here... it's plentiful here.

Used to use sunflower oil,but almost exclusively olive oil these days. I've used sesame oil for some Thai stuff, use soy sauce for some stir fries, and some Chinese dishes

Olive oil only. Some years ago sunflower oil too.
Palm oil is the worst for your health, as far as I know.

I have a collection (olive, avocado, sunflower, rapeseed, palm, sesame, walnut and peanut). I'm very careful with olive and avocado oil both do not take heat so well.

I never use Olive Oil to cook as it has a low smoke point and I have read if you bring any oil to its smoke point it is bad for your health. Not sure if this is 100% true though.
Its not wrong, if you overheat oil it forms acryl-amides and they are very toxic. However its at temperatures beyond 200°C*. Most cooking oils you should not heat to more than 180°C or they go bad taste wise (olive oil even before that).
If you want to go really hot, use palm oil or better even, no oil at all.

* I don't know if this is true for other countries but here in Switzerland we had the french fries law. Cannot really remember when that was but 10-15 years ago. Where frying temperature was limited (exactly for that reason) and suddenly you wouldn't get crispy fries anymore. Now days they have refined the frying process and the french fries are as good as ever...
It wouldn't be the internet without people complaining.

Only olive oil.  Others change the taste to much for me.

I wanted to just say bear fat though as it sounds tougher.  I have a cookbook from my grandmother that has old school recipes, one calls to 'grease a heavy pan with bear fat'  :D

We use a combination of EV Olive (for flavor or low temp cooking), Sunflower (I like this one for higher temp), and Coconut oil.

Coconut oil can be awesome, but it has to mix well flavor-wise. It also depends how refined it is- the more refined it is, the less of the coconut flavor remains. I personally love the taste of Coconut oil for deserts, and anything Asian, Indian, Caribbean, and some other Latin/South American. I also don't think everyone tastes it the same- I almost always notice any amount of the stronger-coconut oils, but my wife often still wouldn't notice. Coconut oil is also healthy and has all sorts of alternative uses, from treating sunburn to minimizing your cat's hairballs. :D

Does sunflower oil affect the taste of the food?

+1
In my experience it's a very mild flavor that doesn't "interfere" with other flavors, if I taste it distinctly at all. I prefer it to Canola/Vegetable oil.

If you plan to deep fry then there are better oils.  I rarely if ever deep fry so EV Olive Oil is my go to for most of my cooking.  Good to hear you are looking at better health as every little bit helps.
