Happy Independence Day to our revolting colonial cousins!
Happy 4th of July. It's a gorgeous day here in California and as planned I got 2 racks of St Luis cut ribs getting ready to get a good rub down. I'll try the A1 rub on one and my own blend on the other. Smashed red potatoes with garlic, grilled crimini's and squash, and honey drizzled berries with whipped cream all on the menu. I'm sure along the way I'll add something just not sure what. Be safe

Of course, that's because fireworks are illegal in New Jersey. I would never have them in my possession, thus never being at risk for blowing a digit off...... However, 20 minutes west of here in PA, with a Jersey license you can buy stuff that looks to be equal to a Scud missile.....

Be safeLet me know how that A1 rub turns out, eh?The A1 rub was good, not too salty and not overly sweet with the right amount of mesquite flavor. I'll use more on the meat next time tho but with all pre made rubs I'll add a dash of two of ingredients to bolster the flavors. I like Cumin, smokey paprika, herbs, and a bit of garlic powder as well as a few other things. Over all it was good but I'm always trying to improve my ribs. They were great and tender as all heck, the bones just slid right out and the meat was juicy.
