Naming just 3 is tough since I rotate through so many models...

1. Explorer (always in my pocket around the house)
2. Compact (currently in my other pocket around the house)
3. Minichamp II (always on my keychain...one set of keys has hunter green scales and the other the standard red)

If you were going to take away all of my SAKs except 3, I would choose the Explorer, the Champion Plus and stick the Compact in my watch pocket to EDC in place of the Minichamp II.

Trekker (also called various countries' "Army Knives").  An OH version is perfect for heavy outdoor tasks.
Fieldmaster (being everything I need in an SAK, and nothing else, it was also my first SAK). Also the Wenger Handyman, which is basically the same knife in a smaller format.
Executive (the current 74mm, not the 58mm knife (basically a Companion with older tools), which I also have is cool too).  A knife neither too big, nor too small. Perfect for EDC.

91-Ranger, dense toolset with tools I use

Large size is a tie between Wenger 120mm Everest and Vic 111mm Hercules :climber:

My top 3 are:

1. Swisschamp ( I have edc'd a Swisschamp for
    over 30 years)
2. Ranger (I sew a denim pocket on my jeans
    between the right front pocket and right rear
    pocket and carry a Ranger in it)
3. Alox Minichamp (It is amazing how handy this
    knife is for such a small small size)

I am a long-time basketball fan and lived for many years in Southern California and followed the now-famous Lakers-Celtics rivalry with (at that time) Wilt Chamberlain, Jerry West & Elgin Baylor anchoring the Lakers against Bill Russell, Bob Cousy, Tommy Heinsohn & co. for the Celtics.  I was fond of saying that my two favorite teams were the Lakers and whoever was playing the Celtics.

What does this have to do with my top 3 SAKs?  Based on use, my top 2 SAKs are the Explorer that I carry every day and the Minichamp II that is always on my keychain.  The third top SAK is a wild card that keeps changing based on circumstance.  I am especially fond of the Swiss Champ and the Cyber Tool SAKs.  Although not a SAK, I love the Spirit X and if I could only have three Victorinox products, it would be one of the three along with the Explorer and Swiss Champ (bumping the Minichamp II).

I skipped on Compact because the lack of plier. Even a small plier in Swisschamp is better than nothing.
And then, I introduced to Spirit X. And it was love at first sight. Just like when I got Super tinker and Swisschamp a long time ago.
Of course Compact is a wonderfull SAK, and a perfect combo for my Spirit X. But I need a mag glass from my Swisscard lite and better ergonomics when writing with Signature.

I would have to say that my top three are:

1.) Explorer
2.) Explorer
3.) Explorer

I will admit that I do try other sak's at times to see if it can kick out #3 from the list like the Swisschamp, Golfer, Spartan, Craftsman and even tried an alox Pioneer and Pioneer X before but so far, nothing else has made the list.  To me the Explorer has the best tool set for urban carry vs number of layers.  If I did replace one on the list I would say Swisschamp!

I will also admit that I have found that I like the plier's (aka super tweezer's) so they need to make a model like the Explorer plus plier's!  :)  The Craftsman is the only sak that I have that has the back philips on it but I do kinda like the rest of that tool set as it has plier's!  No worries, it wont replace anything!
