Ontario Butcher Knives

Modified of course :D

The Old Hickory Butcher has been cut down to about 4-5/8" and the Hop knife to  5-1/4"

Figured western Maple scales.

I've an old and huge Vic. kitchen knife that I may have to attack.  :think:
 I've no need for such a blade in the kitchen (its about a foot long!) but I do need and don't have an outdoors fixed blade.

I've been looking at various small Santoku and Chef's knives for something to include in my camp kitchen gear. Nothing has really struck my fancy along those lines but I think the modified Hop knife will do the job.

Yeah I can't see why not :)

Finally got around to finishing my butcher knife project.

This one started out as a Russell Green River Camp knife blade. Scales are toasted Osage Orange.

Hey got love the old style blades. Some people still dont understand how well these work today. Mountain men used the old butchers for years, and most likely still would to this day.

If I will have a chance I will have to take pics of my butchers I use for reinacting.
