SAK tag teams.

Sometimes you just need more than one. Like a team, to get it done. I've found that sometimes I team up SAK's to get it done. Since my all time real world everyday carry is a classic, I accept that sometimes it's a wee bit small. So, a second SAK is sometimes needed. Mostly for food use. The classic lacks nothing as far as opening those plastic packages that everything comes in now, or my mail, or the Amazon package by the front door. But it fails with a loaf of fresh Italian bread, or even a baguette.

I sometimes will carry my old Wenger SI, but even that has its limitations. Since the blade is all I need, I find an alox bantam stashed in the wallet is so thin I can forget its even in there. And the combo tool opens my favorite beers, like Heineken or Becks. I've also been known to have a bottle f Guinness along, but I really prefer to have the Guinness fresh from the tap.

The added length of the 84mm bantam does an easier job on the wax coating on a round of Gouda cheese that will go with the baguette. So, more and more of late, my SAK team consists of the ever present classic, with a alox bantam in reserve either in the wallet or the glove box of the car.

I find that I really don't like to carry a SAK more than one layer, since I love slim and light. I find its easier to team up two separate one layer SAK's than carry a thicker two or more layer. Kind of spread it out like.

As a retired old fart I’ve found the 58mm to be more than enough for my lifestyle. Doesn’t take much knife for scooting around town or doing a little fishing. As you pointed out, the 58mm is a bit short for food duties, but 98-99 percent of the time we are eating we are at home or at a place that has the appropriate utensils.  For that other 1-2 percent I’ll improvise.

I used to feel like I needed at least my big Spyderco Autonomy 2 and my modded Pioneer X (blade and awl removed, can opener modded into a Technician type flat blade).

Here lately, for the past several months, all I’ve been carrying is my fat carbon scaled Cadet.   I don’t really feel I need more.

I’m also an Alox Bantam wallet carrier.

On my key chain, I’ve moved up from a Classic to a Rambler.  YMMV, but for me it has been worth the slight increase in weight and bulk to get the excellent 58mm combo tool Phillips.

So the Rambler and Alox Bantam are sort of the EDC base.  I’ll usually add 1-2 other knives/SAKs depending on what I have planned for the day and what strikes my fancy.  But if I had to get by with just those two, I would probably be fine most days.

The Alox Bantam is still a bit short for food use, but it can usually get the job done.

I’ll agree the 58mm is quite capable for the small daily tasks.  I do frequently need a pliers based multitool at home and at work, so my 58mm is paired with a Spirit. 

The most frequent home and leisure setup is the Spirit XC butter blade and a Rally.  The Spirit X and Rambler go in my work bag.

Though I stray from time to time, the Explorer Plus is my usual EDC.  I pair that with a Manager, mostly for the micro phillips driver.  The Manager is also nice when I am out in public and don't want to unduly frighten the lilly-livered with the main blade on my Explorer Plus.  Like you, Mr. C., I could get by just fine most days with a Classic, and I understand the attraction of real minimalism.  The ST300 is definitely overkill.  I've been carrying it just because its fun, and it makes me feel good.

Ya gotta love the way alox ages! Kind of worn around the edges, but it's still there in the checkering. Looks like a great pair!

My EDC these days consists of a Midnight Manager on my keys and a Climber in my pocket. I find this covers most of my day-to-day needs without having to grab my tool kit.

I don't know if you can ever go wrong with a 58mm backed up with a 84mm. Kind of covers 99.9% of life's daily problems.

This is the conclusion I came to as I got "older". That old saying of my dad's kept popping up, remember who you are, and where you are, and what you're doing. I'm not a super hero saving Gotham, I'm not Steven Sagal fighting a trainload of terroists, and I'm not James Bond. For most of what I need a knife for, or small multitool, a 58mm does fine in suburban surroundings. If the blade is a bit too small for food use, then the 84mm saved that day. I always loved the small tinker better than the 91mm, so I gravitate in that direction.
