OK, guys, this isn't chili per se, but it was made with the same techniques one might use to make great chili:




This is a Southwestern Chicken soup. With a bit more chicken and chili powder, I might be tempted to call it 'Chicken Chili', but it is really a soup.

Here's what I did:

Browned diced chicken in some hot pork lard. I did this in batches. With the last batch, I tossed in 5 cloves of crushed garlic and cooked those until aromatic. Then all the chicken went back into the pot.

To the chicken and garlic I added a big spoon of chili powder, a good pinch of toasted cumin, and a nice dash of Chipotle chile powder. Also a few grinds of black pepper. Because black pepper.

After these heated up and got stirred in, I added a jar of organic salsa. (oh, the smell here was amazing.)

When the salsa-chicken mix started to boil, I added a couple of cups of chicken stock.

This all simmered for a while, until I got hungry. I did add an extra pinch of salt, which seemed necessary.

It got served up with some sour cream and a dash of hot sauce (for me). Delicious!

Guys, super-simple soup: chicken, garlic, salsa, and stock, plus a few chili spices. This is a "can't go wrong, guaranteed to fix what ails ya, too easy soup." Mrs Nix loved it.  Make it!  :pok:

Edit: just remembered, when I added the black pepper, I also added a good pinch of dried marjoram. Could have used Oregano or Mexican Oregano just as well. Thyme would have worked here, but shifted it a bit away from the 'southwestern' theme.

I've ben messing around with different cornbread recipes lately. Cornbread could become a habit.....
It has for me, kid likes it too, the Mrs tried it last night and liked it, the nice thing about the cornbread is you can mix it with the chili and it sucks up any of the loose juices! :drool:
