Potjiekos today
on:
May 12, 2019, 03:17:51 PM
Traditional South African meal cooked in a cast iron pot outdoors over a fire. This one was a chicken and bacon one that’s quick to prepare and only needs about 1 hour 45 minutes to cook. Traditionally, a potjie is not stirred so all the veg and meat pieces stay intact and retain some individual flavors. Served with rice.

Sweet...looks lovely!
Do you need to marinate the Chicken before hand? And 1.7 hours with no stirring...I am curious won't the food at the bottom stuck to the pot since it is cast iron in high heat?

No marinading required. But the trick is to heat the pot with some oil and brown the pieces with just salt and pepper before adding the rest of the ingredients and stock.
It’s very easy to burn the bottom if not careful. It’s all about regulating the amount of coals under the pot to just have the contents simmering gently. Some potjies can take 3-4hrs like oxtail. Chicken is faster.
Below is a picture of the recipe I used today.
Thanks for the interest!

Thanks GLBM.
It was Mothers Day so a good excuse to make a fire (no really, I do love my mother-in-law).
