Here is my UBOAT pie, sliced and served:






The filling is a cauliflower and green pea curry (Tikka masala sauce). The usual suspects are in there: garlic, ginger, onions, bell peppers, and tomato. The surprise feature was a layer of cheese at the top: covering the filling, but under the crust.

If anything wins me the gold medal--aside from Terry Jones' accolades--it will be the surprise cheese layer.

Mine got served with extra green chiles and a dollop of lime pickle.  Yum!

(Mrs Nix thought it was the best cheesy curried cauliflower & pea pie she'd ever had today. So that's something...... :dunno:)

There are few entries in this category, so I don't anticipate much competition and that gold medal feels as if it's within my grasp......   ;)   

Nevertheless for a vegetarian pie, I thought it was quite nice. It could be improved with the addition of pancetta, a little ham, and some sausages. Otherwise, not too bad.....  :D

That looks wonderful. What a great idea.  It reminds me of a chicken tikka masala pie I saw online, and a veg curry puff pastry I've had from a Thai restaurant. 

I'm going to have to try to make something similar one of these weekends.   :ahhh


Did you make your own crust?  Or did you buy puff pastry?

Eleven, I made my own pastry for the crust. I used the 'all-butter' recipe from the Joy of Cooking. Dead simple but quite excellent. I modified it a bit by adding a drop....just one drop...of lemon extract to the ice water that goes into the crust.

Pie crust is a funny sort of thing. Easy to do; hard to do really well. If I say so myself, this one came out nicely: flaky, sweet, a little nutty.

My inspiration was Chicken Tikka Masala, but I wanted to do a vegetarian interpretation since the skipper and Eamo are veggies. (And Mrs NIx loves green peas.) 

There are still 4 days left in British Pie Week........get cooking!

I do something similar but with hot dog or salami chunks and a lot more chilli  :cheers: it's winter comfort food at its best.

Unfortunately I won't have any time to make a pie within the week. 

I've had beans and spam.... One of my guilty pleasures.  Also something I can't bring myself to make myself, I've heard nothing good about the state of spam in the minutes between liberation from the seal of the can until it's browned in the pot.

I actually like Spam. You can get "Spam Singles" now. These are just small packets containing a slice of Spam. They make for a quick and easy lunch or trail snack eaten cold (with some hot sauce) or can be chopped or mashed for use in other dishes.

The two Spam dishes I make that I like the best: Spam and fried egg sandwich, and Spam stir-fried rice.

One of these days I'll get around to trying to make Spam Musubi:
