If you've purchased the iTunes Plus version of the songs, you can use the iTunes software and save them as MP3s.
Nick FWIW I'm using ffmpeg for most of my multimedia conversion chores. If your on a mac or using some open-source operating system, that's the way to go. If you're using ms windows i reckon there is prebuilt binary, although I've never tried that.
