I hand sharpen all my knives and use a lot my small rat tail in medium-fine grit diamond for small damages on the blade and then a little hard arkansas stone is use for the finish.
Cuting small strips of paper along the way helps to feel if your getting sharper in your process.
The best sharpening method/product depends a lot to each person...I think it depends of your dexterity, skills, experience, personnal finances and a lot of other factors
