Knife conversations

I have been collecting knives for less than a year and victorinox for a few months.   Meeting a person to talk hunting books yesterday morning for coffee it turned out he also had some knowledge of Victorinox knifes.

I realized he was the first person who I talked with who I could actually go into some detail on the knifes.

Most of my discussion on knives is more me reading those more knowledgable on the web.   None of my friends, neighbors have any interest.

It was refreshing to actually talk to someone in person about swiss army knives.

I know what you mean. I have some friends who were seriously surprised what my Climber could all do and how sharp Blade and scissors were. And I felt like "What dull knives are they normally using?". For me a knife is one of the most basic tools everyone handles.

I usually don't talk about collecting knives unless I know someone fairly well. There are simply too many prejudices around. So, when I actually end up discussing knives with someone who's actually interested as well, it's always a good experience. Those people are few and far between among people I know.

My guess is that you don't realize how much different it is to use a dull knife and a sharp one until you actually decide to sharpen one yourself. Most of the time, people will simply use dull knives, and that will be the norm. For most  people, even a cooking knife as sharp as a razor isn't normal, and perceived as scary. A dull one seems less dangerous, until they start using too much force to cut things...

I recently started to sharpen my own knives, and while I'm still a complete newbie the difference is astonishing.

I hear you. I got a Lansky sharpener as present for christmas. So since two months I'm able to bring knives back to the factory edge (and beyond). Now I enjoy cooking doubly, half as many tears cutting onions, double speed cutting raw potatoes, slices with half the thickness, etc.

Sharp knives are safe knives.  After working in a kitchen for years, I discovered this the hard way.
