100mm Chisel Grind question

On almost all of the modern 100mm knives (Florist, Day Packer), the blade is ground on only one side, or chisel ground.   

I am considering getting a Day Packer to get an Amazon order of small items over the $25 threshold for free Prime shipping , and am wondering, is the chisel grind better for anything?   Is it possible to make the chisel grind a V grind?

If you ground it to a V shape you'd lose alot of the blade since the cutting edge of the blade is flush with the back side of the blade, to grind it to center you'd lose alot so it isnt too practical.   

I assumed the advantage was just in manufacturing them as they just have to grind one side, but maybe for the intended tasks they are of some use I dont know about.   

I bought a couple years ago for mods and found chisel grind a complete turn off and I didnt end up using them.

grind is so off center, that there is really no good reason to make it v-shape. For their intented use they are great(gardening and florist). I have gardener(sheepfoot blade), and they are sold separate for right or left handed users. I have read that many users like using them for wood carving. But i must say, it will take some time to get used to its grind.

Other thing wort noting is their handles. Handle is noticeably much thinner than in normal 91mm SAKs. So long period cutting tasks might take some effort.
