I prefer to steel rather than strop as I find it quicker and easier. Also, once you've got confident in steeling an edge it opens up possibilities with coffee mugs, car windows, metal table legs and a myriad of other stuff for impromptu sharpening

I only generally strop if I'm trying to get a very refined edge

Steeling doesn't really sharpen , just realigns burrs . A smooth steel works better than a striated one .

The older I get the more I strop .
