I have come to the conclusion that the best compromise for the majority of people is:

1) relatively soft steel from a good manufacturer - means it will be properly heat treated, easy to resharpen, relatively cheap (and so more easy to use and abuse, and replace if need be)
2) Very thin blade profile overall - will give superior cutting ability, even when the edge may not be at its sharpest
3) stainless steel - corrosion resistant, no need to worry about rust with normal daily usage

Based on the above, my perfect knife is a swiss army knife blade.

All my utility knives have SS blades.
I do not recall seeing any carbon ones, in regular shops.
I the one I ever go seem to be high carbon and rust like crazy.

Yeah, my current batch of regular blades are carbon (rusty ::) ) and hook blades are SS.

The come in both varieties.

Blade design and edge geometry are generally more important than steel . The best steel is limited by a suboptimal heatreat .

All that said , I'd prefer 154CM with a primo heat threat , than 425 with a primo heat treat .

I'm well equipped for sharpening , so that's not too much of a factor .

Enviromental considerations factor in , ie: in a pocket enviroment , in high humidity I'd prefer H1 or 440 C to 154CM , or 630V .

My favs are 440 , 154CM , A2 , and D2 ( assuming perfect heat treat in every case ) .
