Pita bread recipe - just made 12 loaves to have with some BBQ ribs ......

Andy’s PITA OR POCKET BREAD

I package active Dry Yeast dry yeast
1/2 cup warm water (about 110  degrees  F)
2 Tablespoons extra vlrgiin  o!ive oil
2 Tablespoons of honey
2 cups warm water
6 cups All Purpose flour OR whole wheat flour
1/2 teaspoon olive oil

Soak the yeast in 1/2 cup of warm water for 10 minutes
In a bowl - mix: yeast mixture,  olive oil, honey and water.
Add 6 cups of flour - 1 cup at a time until it forms a ball + kneed for 5minutes
Cover with a towel and place in oven with the oven light on for an hour

Preheat over to 500 degrees F

Form into 12 balls  and let rest 10 minutes
Pat out to 5" to 6"  round loaves
Place on baking sheet with olive oil or on a dry pizza stone.

Bake 10 to 11  minutes
