Recently had a new kitchen fitted. Decided to treat myself to some new kitchen knives. Costco had this in. Scary sharp.

Very nice looking set there Millhouse. Are the handles hollow with those holes?

Nice set up Millhouse!

My "feature set" is just a 5 piece set by Kitchen Devils, another arm of Fiskars. They are a very ergonomic set, and are great to use. I also have a few other knives in a drawer. A couple of them I've had for a while and I got three wood handled Sheffield made ones thanks to our very own Sparky415  :tu:

In time I'd like to get a few Staniforths in. When I visited their factory they had a GORGEOUS damascus chefs knife, but it was way out of my price range

They are not holes, but dimples to aid grip. The handles are hollow. Each knife is formed from a single piece of steel, and the handle is filled with sand to balance the knife.

That would have been my second guess and I was going to ask that. Still, very nice. I hope you got a deal on them.

There is no way I would have paid full price, way too expensive. Costco had them on offer.

Not yet mate. They need more than a touch up as you know, and I've actually considered getting all my dull knives together (kitchen or otherwise) and taking them to work. There's a guy in our area who has a mobile sharpening service. He's a guy who's worked in the cutlery trade for years, and now has a van kitted out with machines for doing every kind of knife sharpening including serrated blades. He goes round hotels and restaurants etc, servicing all their knives. I reckon I need to get a knife roll, get all my stuff together and get him to blitz the lot, then it's just a matter of keeping them touched up. A job for the New Year maybe

Invest in some sharpening equipment and a strop, then buy some plasters/band aids. :D
