hi there all, im new to this forum, i read alot lately but not respond, i just registered..
i bought a lansky sharpening system universal. i tought its good i sharpen my kitchen knife(i think its fruit knife)lighter knife... today i encountered a kitchen knife and it had a shape like in this video
at 3:37 he talks about some grind, i dont reallly know what he talks about, is it the all the blade  or just the tip or the edge ass u call it?
if its the whole blade, it looks like the kitchen knife i tried to sharpen with the lansky system. and i marked 3 areas of the knife to see if i hit the right angle:
so the middle part was at 30 angle
the edge was at 25 degree
and the buttom cant get enough, like i need 40degree angle lol..
it happens with my enlan bee el01..
how can i bypass that or sharp it how it was supposed to be?
if i dont find an answer i think i need to sharpen my knife with 3 diffrent angels and i think its not normal..

The guy in your video knows a lot and I’m sure his knives are sharper than mine but I think he is a little confusing

Lansky;
A couple of things
When you use the Lansky system on a knife for the first time you are regrinding that knife to suit the Lansky so you might have to remove a lot of metal, when you re-sharpen it the second time it will be a lot easier  :tu:

It might be useful to take notes or a picture of each knife so you set up the Lansky the same every time

I find that colouring in the blade with a sharpie really helps me to see where the stone is removing metal, I also have a desk light and magnifying glass  ;)

 
Also I don’t use anything finer than the red coarse stone for my kitchen knives, The edge seems to cut better for the kitchen

If I understand your question correctly I have found that (because of blade geometry?  :think: ) the angle changes along the blade, so I have been changing slots depending on the area I am working on
