What is the two bladed model please?

Except the stockman, all are Hartkopf knives. I don´t have a model name or number.

Melon knife?

That´s what I was thinking, melon tester. Is there a small blade or a fork (mine has neither)? In Germany these are called Wurstmesser (sausage knife) or Probiermesser (test knife). I sold a few of them to my coworkers when I was in the fruit trade. They are/were available with wooden scales, or stainless steel, or plastic, for about E 25. I think it´s a very cool pattern. Second and third pics are from The Web.
