Do you worry about blood (or peach juice at lunch) getting into the joint and gumming up the works? I tend to use fixed blades for 'messy' jobs, and obsess about it when unavoidable.My Suisse Officier is kind of stiff, but I dread drilling out rivets and such needed to take it to Parade-Rest for cleaning.
