They have nothing to do with Vic, except for being good, straightforward knives where you get your money's worth. The blades are thin; excellent slicers. Their simplicity has a charm in itself.For most people, I think starting with no 8 is good. It's the size which fits most people's hands.You can get them in carbon steel, which will rust, and 12C27Mod which is very stainless (the steel is designed to be dishwasher safe, but an Opinel certainly isn't).
I had two, sold them because I wasn't using them and thought nothing more of it. Now I want an Opinel too. Ahh, mto, why do you do this to me?

I've seen them in Willian Sonoma and I'd imagine they might be in Sur La Table. I'd also suggest a #6 or #8. Some models come in neat colored wood handles as well.
The No 6 and up have the locking collar which really makes them a nice, safe and effective knife. I have a No 4, very handy, and the ones in this pic. From left to right, a No 9 Bricolage, a No 8 Outdoors, a regular No 8, 9, and a No 6. I love them all! The Bricolage takes a conventional bit kit which makes it really handy to have around! That knife and the Outdoors are the only Inox blades I currently have. You gotta try them!! Once you do, you're hooked!
