Advice on a sharpening system please.
on: July 18, 2008, 01:58:50 AM
I'd welcome any advice you can give me about which sharpening system I should go for.

We have various Sabatier kitchen knives that are in great condition but desperately need sharpening. The missus is asking me to sharpen them somehow, and I see this as a great opportunity to try my hand at sharpening without risking any of my own, far more precious blades. Unfortunately, I have not got a clue which "system" I should get.

I haven't sharpened anything for a very long time, and my experience is limited to sharpening chisels on an oil-stone, so whatever I get must be pretty idiot proof - if I have to replace these knives I won't be able to afford that Kershaw ET I've got my eye on, as I'll be out of cash and Brownie points.

So guys, the destiny of that Kershaw and my own are in your hands.......

I used to come here a lot.

Cheap foolproof ones are probably spyderco sharpmaker, lansky sharpening system or lansky turnbox. I use sharpmaker and it works quite well.

I've been reading up on the sharpmaker and even found a video on Youtube showing it in use. I am tempted, as it looks pretty straightforward. Does it come with everything you need included with it?

Yep it come with two medium stone (800 grit) and two fine stone (1200 grit). It works well for sharpening but too fine for reprofile. Optionally you can buy the ultrafine stone (2000 grit I think), and diamond stond for reprofiling.

Here's another video about it. Look in related video, there are three parts on different systems.

+1 for the sharpmaker! it works really well, and yes it has everything you need.
it doesn't come with diamond rods but they are for serious re-profiling
and if you needed to do that, rods woulds take forever anyway!

shop around and get a good deal.

it comes with a nice DVD that really shows you how to use it (not that it's hard).
word of caution, don't sharpen the neighbors kitchen knives, they'll never leave you alone!

Bloody hell - this is going to cost me £40 - I didn't expect that!  :o

It's no cheaper buying from the US either because of the postage (I guess it must weigh a bit).

Hmmm - I might buy the Kershaw and offer to let her use it in the kitchen. You reckon she'll go for that?  :D

I used to come here a lot.

It's quite light actually. The package is kinda big thou because of the dvd and booklet, but if you are willing to skip those the actual sharpener will fit in a small bubble mailer, and probably cost you $60 total to send over.

$60 would be better, but it's a bit of a risk. If customs catch it I'd have to pay another $27 (i.e. £14) on top so it could cost me more.

So I may as well go with the £39.95 inc shipping I've found. I'd get it quicker too.

Ah well, I'll fob her off till payday and order it (and the Kershaw ;) )

I used to come here a lot.

I use the Lansky system, but I think the Sharpmaker is more versatile, especially for serrated edges.

I got a sharpmaker a few months ago and it's fantastic, really pleased with it, my kitchen knives are sharper than ever and it only takes a few minutes to put a great edge on any knife.  This was the cheapest i could find in the UK mate, it's not exactly cheap but if you have a lot of knives that need sharpening up you won't find anything that will do as good a job for less imo, i've wasted all sorts of money on other cheap sharpeners which only seem to scratch away at knives http://www.handyniknaks.co.uk/spyderco-sharpmaker-204mf-spyderco-blade-sharpeners-121-p.asp.
