How are those Grohmanns when it comes to filleting a fish?  It looks like it would work great even though it's not the traditional filleting knife "shape"..

I don't know...I've cleaned plenty of Trout with a Grohmann, but never filleted one.

The saber grind is probably too thick to work well.
