Onion sliced and diced, bread shredded, added broth, sage, melted butter, salt and pepper,!and stirred until and spices added to proper tasted.
Then trimmed fat from pork loin chops.
Cut foil to length, the tear strip is gone from carton.

The No8 did the job, but I do think I will prefer the No9 next kitchen chore.

In oven at 350 covered and will check in 1-1/2 hours.   Scheduled 2!   Then uncover and leave in oven for at least 30 minutes more.

Serve with apple Sauce, likely have leftovers for a few more meals 😊

It was actually very good, surprisingly good!

Have left overs for at least four more meals.

Tasted, add corn one night, and cranberry salad another, like having another style dinner each time. But, my favorite is with apple sauce.

Pork Chops was my favorite, selected once for birthday dinner, but only way my wife saw her mother fix was with dressing, luv’d it and it became annual Halloween dinner!  First time I have had it in 3 years 🥲
If I start and end the day above ground, it is a good day!

Hope yours is as good!

My dad loves porkchops, but the smell made my mom so sick when she was pregnant with me that she had to stop making them. She made them again when I was a kid and I hated them! Must've been mind controlling her from inside the womb or something. Still not my favorite, but enjoyable if prepared right. Agree that applesauce is a help. We had some kind of apple pork at the fancy brunch we went to today. I didn't have any of it, but my wife said it was good. Will probably have some leftovers for lunch tomorrow.

Day 10

Carried the CYO 8 in this pocket of my suit for the fancy brunch. Apologies for the blurry picture, but I wanted to show it and my flamingos. No uses, but was a great conversation starter. Met a woman whose husband collected pocket knives. He passed, and she's looking to get them out of the house. Y'all will be the first to know if I find anything interesting in it.

Opinel '24 Day 10
I chopped up some leftover pork roast with the No 8 for late dinner when I got home from the park.  I'm not an expert on wood grain but I've been calling this walnut.  JonesE's walnut is dark brown while LoopCutter's walnut is not.  I expect walnut to be dark which makes this discrepancy confusing.  So, I went back to look at the original add from when I bought it and it says wine cask oak.  Anybody have a dissenting opinion?  I think I will stop calling this No 8 Walnut, but did Opinel ever use "wine cask oak" as this one was listed?

Haven’t used this cheese knife and fork as the no 8 in my kitchen does well enough but rather like it

Bonus pic with my No. 9 and another friend on my wife's grandmother's 1911 Singer sewing machine. If you take away the locking ring and changed the logo, the Opinel would have been right at home when this machine was brand new!

I've teamed up with various multitools, but the crazy thing is that I haven't had a use for any of them!  The Opinel has done everything I've needed.

I have two, a No8 and a No6, both label Walnut.  The wood grain on the No6 is tight, and have thought it could be any wood and just STAIN walnut.  The No8’s wood grain is tight, yet longer.  Side by side you can see the difference in stain and if you enlarge you may may out the grain.

Oak will have and open grain wood, with darker streaks off long grain.  Before staining OAK must be sealed, otherwise it will get blotchy.  If done properly it should have a golden hue.  Yours appears to have golden red tint, very possible  barrel Oak.  It just looks as it belongs to Royality. 👍

A very good choice, the cheese knife is my favorite opinel and the main kitchen knife I use. I rounded the tip, as kept stabbing myself in use. Now it is perfect.

DAY 11

I have been playing with grinds on the opinel over the weekend, as my No 8 is pretty much worn away with use, the edge angle is quite obtuse, close to 25 degrees either side. It cuts but doesn't do those fine feather sticks.



So I decided to regrind one side to knock the shoulder off and this was the result. Works a treat, and just floats on that one side of the obtuse angle to control the feathers.

I really should use it :think:

I use 3 knives every day and they cover pretty well anything, a no name santoku which sharpens up really well, a Vic serrated pairing knife and the Opi 8

I saw your post showing the mod, good job :tu: from reading your posts I can see you use your knives a lot for some rather different jobs to how I use mine!

I went for a hike and fish, and on the trail the Opinel helped me harvest this tinder. I am not sure what plant but it was great stuff. Took a spark with a quickness.

The blade on the No. 12 is listed at 4.82”, and I measure it at about 4 3/4”.  This makes it a large folder by pretty much any reasonable definition.

However, I would bet that almost all of us have at least one kitchen knife with a longer blade, and many of us have outdoor fixed blades that are about this size or longer.

My opinion, based on limited experience with it thus far, is that it is actually the size of the handle, much more than the size of the blade, that makes the No. 12 somewhat awkward/unwieldy to use.

Remembered to take a photo as I was putting stuff away as I rush to a dentist cleaning.

Day 11

The fork and spoon from the picnic kit fit the DIY 8 as expected. It is a bit awkward to use with the finger grips I carved. Better lefty. Factory 8 and DIY side by side.
